This is one of my personal and favorite Pequin Salsa Recipes. Its very easy and very fast to make but even more than that, it’s VERY, VERY GOOD!
Ingredients:
1 – 8 (oz.) can of Hunts Tomato Sauce w/Roasted Garlic.
2 – 10 (oz.) cans of RO*TEL Mexican Lime & Cilantro (Which consists of diced tomatoes with Lime Juice and Cilantro).
1 – 24 (oz.) Jar (I use an empty jar of Picante Sauce. But any other you can use is fine. Preferably one at least 28 (oz.).
X – Pequin Peppers (Use an X amount of Wild Peppers according to the hotness level you want. Start with a few).
Instructions:
1. Empty the can of tomato sauce into a blender. Then add the Wild Peppers into the blender as well. Grate, chop or blend these ingredients thoroughly. Taste the mixture to see if you need to add more peppers. Add accordingly.
2. Open and empty one of the RO*TEL cans into the jar.
3. Empty half of the blended mixture into the jar and place the lid on it and shake vigorously.
4. Empty most of the other can of RO*TEL into the jar and then empty most of the remaining mixture into the jar until almost full. Leave enough space at the top of jar in order to be able to shake thoroughly. Then shake well.
5. You can mix the remaining ingredients together and use immediately. If you have a big enough jar, you won’t have any left over ingredients.
6. ENJOY!!!
And that’s pretty much it! For a smoother Salsa, you can empty one of the RO*TEL cans into the blender with the tomato sauce and peppers. You can refrigerate the freshly made Pequin Salsa and use freely. It is SO, SO GOOD! That amount will only last 2 or 3 days in our house. We could have other store-bought salsas, but as long as we have the Wild Pepper Salsa, the others won’t be touched!
